I find it really hard in the morning before the kids head off to nursery to get everyone fed and changed.
These muffins were a life changer this week. It also meant I could use up those bananas which ripened too quickly.
Our daughter Freya does NOT eat fruit so hiding a banana in a muffin has been perfect to get fruit into her without her even knowing about it.
Bryn thinks he is eating something unhealthy but actually it is really good for him. Win win all round I say.
So lets get to the recipe.
Banana and Oat Muffins
Ingredients -
70g butter
250g flour (wholemeal is best)
100g caster sugar (I used coconut sugar)
1 tbsp baking powder
1 pinch sea salt
2 large eggs
125g Moos on Thames milk
280g ripe bananas
60g walnut halves
1/2 tsp cinnamon
1/2 tsp nutmeg
20g jumbo oats
How do I make them ?
1 - Preheat your oven to 180C
2 - Line all your muffin tin holes with paper cases (Not going to lie I have ran out of cases so I just put some oil on them all.)
3 - Place the butter, flour, sugar, baking powder and salt in a bowl.
4 - Mix the ingredients together.
5 - Add in the eggs, milk, banana (mashed) walnuts (broken into bits) cinnamon and nutmeg.
6 - Mix together until you get a lumpy batter
7 - Fill the muffin paper cases.
8 - Scatter the oats over the top
9 - Bake for 20 - 25 minutes
10 - Leave to cool in the tray then store in an air tight container .
