I thought I would put together a fun way you can use our milk. May be a simple recipe to make with the kids or something a bit different to do over the weekend. You can make so much with milk so I thought lets start with something simple like yoghurt.
To make yoghurt you need -
1000g full fat milk
120g natural yoghurt
- Place full cream milk and natural yoghurt into a saucepan.
- Warm the mixture to 50 C and keep it at that temperature for 6 minutes.
- Constantly stirring it.
- Once the six minutes has finished transfer it to a thermal serving bowl or sealable jars.
- If using jar wrap them immediately in a blanket to keep warm.
- Leave them there for 11-13 hours at room temperature.
- Once your 11-13 hours are over place in the fridge for 3 hours before serving.
* You can then use your yoghurt as culture just like you would with sourdough to make another batch of yoghurt.
I mean how cool is that, you can just keep making your own yoghurt and you know exactly what it is made from.
With your yoghurt you can make all sorts of other things like -
Breakfast idea -
Berry and granola breakfast -
1 tbsp shredded coconut
For the topping -
2 tbsp granola
43 grams raspberries
43 grams blackberries
43 grams blueberries
Dip idea
If you like a greek dip why not try Tzatziki sauce
Crush up one garlic clove, 150ml of your natural yoghurt, 10 chopped up mint leaves, a large cucumber grated and the juice of one lemon.
If you mix these all together you have a super tasty greek sauce.
Baking tips
Some people use yoghurt to moisten a cake.
Pudding/sweet treat ideas
You could even use it to make yoghurt bark which is really easy to make. all you need is yoghurt, honey, vanilla extract, salt, fruit of your choice and granola. Place it all on a tray about 1/2 an inch deep. Then freeze for up to four hours. Once it is all frozen, break it up into little snackable pieces.
The best part about making yoghurt like this is that you can use the yoghurt as culture for the next yoghurt. So the next time you will only need to buy milk. If you are using milk from the supermarket you will need milk powder. This is to make the yoghurt thicker as the milk is homogenised. The milk from us (Moos on Thames) is non homogenised meaning that the cream rises to the top so is perfect for yoghurt making.
